1. In a food processor, add 1 cup of the muesli, and pulse on high for 20 seconds in order to create a "flour" like consistency.
2. Add the rest of the ingredients (except the 1/4 cup desiccated coconut) and mix on a medium speed until fully combined.
3. Make into at least 12 balls and roll each one in a tiny bit of the extra desiccated coconut.
4. Refrigerate for at least 1 hour. Store in an airtight container in the fridge.
