Nutty Ice-cream

Ingredients:

Method:

  • 1/2 cup macadamias, roasted
  • 1/2 cup almond kernels, blanched
  • 1/2 cup cashews raw
  • 1/4 cup sesame seeds
  • 1/2 cup pecans
  • 2 tablespoons Sunsol L.S.A. Mix
  • 1 cup milk
  • 1 teaspoon cold pressed oil
  • 2 teaspoons vanilla essence
  • Place nuts and seeds into a blender.
  • Add remaining ingredients and blend on high speed until the mixture is smooth.
  • Pour into individual dessert glasses and cover with cling wrap.
  • Place in the freezer and wait until set.
  • Serve with fresh fruit, whipped cream and crushed nuts.

Serves 4

 

Hawaiian Shake

Ingredients:

Method:

  • 1 1/2 cups milk
  • 1 banana
  • 10 strawberries
  • 2 tablespoons Sunsol L.S.A. Mix
  • 1 tablespoon honey
  • 1 cup crushed ice
  • 1 passionfruit, pulp
  • vanilla essence to taste 
  • Blend all ingredients together.
  • Chill before serving

For special occasions or theme parties, serve shake in a coconut or pineapple shell. Decorate with umbrellas and sprinkle with passion fruit pulp.

Nutty Rice Muesli

Ingredients:

Method:

  • 1/2 cup brown rice, cooked
  • 1 chopped banana
  • 1 tablespoon sunflower kernels
  • 1-2 tablespoons Sunsol L.S.A. Mix
  • 1 tablespoon sultanas, natural
  • Mix all ingredients together.
  • Serve with milk and diced fruit.

 

Serves 3 - 4

 

 

Fig Slice

Ingredients:

Method:

  • 2 cups chopped dried figs
  • 3/4 cup apple juice
  • 155g butter
  • 1/4 brown sugar
  • 2 tablespoons Sunsol L.S.A. Mix
  • 1 cup wholemeal plain flour
  • 1 cup rolled oats
  • 1/4 cup chopped pecan nuts 
  • Grease and line 19cm x 29cm lamington pan.
  • In a medium saucepan combine juice and figs.
  • Bring to boil, then on low heat simmer covered until figs are tender approx 5 minutes. Allow to cool.
  • Cream butter and sugar with an electric mixer until white and fluffy. Stir in the fig mixture.
  • Mix in all remaining ingredients.
  • Bake for 40 minutes in a moderate oven or until brown. Allow to cool in pan before removing.

 Makes 24 slices

 

Cheesy Muffins

Ingredients:

Method:

  • 1 cup wholemeal self-raising flour
  • 1-2 tablespoon Sunsol L.S.A. Mix
  • 1 cup millet meal
  • 1/2 cup grated fresh parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 soy milk
  • 1 egg, lightly beaten
  • 90g butter, melted
  • 2 tablespoons hulled millet
  • Into a large bowl, sift flour. Add L.S.A Mix, cheese, millet meal and parsley.
  • Make hole in the centre and add soy milk, butter and egg combine with a fork.
  • Into 12 greased patty pans spoon mixture and sprinkle with hulled millet.
  • In a moderately hot oven bake until lightly brown approx. 20 minutes.
