Ingredients

  • 1 Cup
    flour of choice
  • 1 Cup
    Classic Fruit & Nut muesli
  • 1 Cup
    reduced fat milk
  • 2
    Eggs
  • 2
    Ripe bananas
  • 1 Cup
    frozen raspberries
  • 2 Tablespoons
    coconut sugar
  • ½ Cup
    chopped peanuts
  • 1 Tablespoon
    pepitas
  • 1 Tablespoon
    sunflower seeds
  • 1 Teaspoon
    cinnamon
  • 1 Tablespoon
    butter + coconut sugar (optional)

Methods

  1. 1. Mix flour, cinnamon, coconut sugar, milk and eggs together in a bowl.

  2. 2. Stir through muesli, pepitas, sunflower seeds and peanuts.

  3. 3. Stir through chopped bananas and raspberries.

  4. 4. Pour into lined baking tin and cook for 30 minutes at 180°C.

  5. 5. Optional: once cooked, melt the butter in microwave and drizzle over slice, sprinkle with extra coconut sugar.
