Yummy Pizza Snacks

Ingredients:

Method:

  • 3/4 cup buckwheat flour
  • 3/4 cup Sunsol Rice Flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon cream of tartar
  • 1/2 cup water
  • Tomato paste
  • toppings of your choice

 

  • Mix dry ingredients together.
  • Add water and mix thoroughly.
  • Knead mixture until dough is a smooth consistency.
  • Press the dough with a fork onto a lightly greased pizza plate.
  • Spread on tomato paste and sprinkle with the toppings of your choice. Bake in a moderate oven until base is golden brown and crispy.
  • Serve immediately with a crispy salad and garlic bread.

Spinach & Pumpkin Pie

Ingredients:

Method:

Base 
  • 3/4 cup rolled millet
  • 3/4 cup Sunsol Brown Rice Flour
  • 5-6 tablespoon water

Filling

  • 1 large onion, finely chopped
  • 2 cups lightly steamed spinach
  • pinch nutmeg
  • 1 cup cooked mashed pumpkin
  • 1/2 cup ground almonds or other nuts
  • 3 eggs, beaten
  • Mix all ingredients for base together and press into a lightly greased pie plate.
  • Saute onion until clear, then place in a bowl.
  • Mix in spinach, nutmeg, pumpkin and nuts to the onion.
  • Add beaten eggs and mix well.
  • Pour over the base and cook in moderate oven for approximately 45 minutes.

Serves 6 - 8

 

Strawberry Slice

Ingredients:

Method:

Base
  • 1/2 cup Sunsol Brown Rice Flour
  • 1/2 cup pecans, ground
  • 1/2 coconut
  • 1/3 cup water

Filling

  • 2 cups mashed tofu
  • 1 cup apple juice
  • 1 1/2 cups pureed strawberries
  • 1-2 tablespoon honey
  • 2 tablespoon agar flakes
  • To make the base, combine all ingredients and press lightly into a greased pan or tray. Bake in a moderate oven for 15 minutes until lightly browned.
  • Soak the agar flakes in the apple juice for 1-2 hours.
  • Blend the tofu, honey and strawberries.
  • Bring the agar mixture to the boil and simmer until the flakes dissolve.
  • Stir the agar mixture into the tofu and pour over the base. Decorate and allow to set before serving.

Golden Waffles

Ingredients:

Method:

  • 1 cup Sunsol Brown Rice Flour
  • 3/4 cup soy or nut milk
  • 1/2 cup water
  • 3/4 cup millet flour

 

  • In a medium sized bowl mix together all ingredients.
  • Pour 2-3 tablespoons of the mixture onto a hot waffle iron. Cook until golden brown.

Serves 3

 

Pumpkin Muffins

Ingredients:

Method:

  • 1/2 cup millet flour
  • 1/ teaspoon bicarbonate soda
  • 2 cups Sunsol Brown Rice Flour
  • 1/4-1/2 cup honey
  • 1-2 tablespoons nut milk
  • 2 teaspoons cream of tartar
  • 1 cup ground almonds
  • 2 cup cooked pumpkin mashed
  • Into a large bowl sift bicarb soda, flours and cream of tartar.
  • Mix together pumpkin, honey and milk and add to the dry mixture.
  • Add nuts and mix well.
  • Into a greased muffin tray spoon mixture and bake in a moderate oven for approx. 30 minutes.

Sponge Cake

Ingredients:

Method:

  • 1/2 cup fine millet flour or cornflour
  • 1 cup Sunsol Brown Rice Flour
  • 1 teaspoon bicarbonate soda
  • 2 teaspoon cream of tartar
  • 1/3 cup honey or maple syrup
  • 1/4 cup nut milk
  • 5 eggs, separated
  • Sift dry ingredients 2 or 3 times.
  • Blend in honey, egg yolks and milk. Stir into the flour.
  • Beat the egg whites with 1 tsp cream of tartar until stiff. Fold into the flour and yolk mixture.
  • Pour into 2 small, greased cake tin and bake in a moderate oven for 40 –50 minutes.
  • When cooled spread with your choice of icing.
